The cultivation of their olive groves is certified organic, the olives are harvested by hand and then a sorting process takes place where only the healthy fruit is selected for maximum quality. The transfer of the olive fruit to the olive mill is done in the same day and with the cold pressing method they extract olive oil of excellent quality.
