Domaine de Kalathas Sainte Obéissance 2022 (Vignes Centenaires)
DDK: Domaine de Kalathas (DDK) is the brainchild of Frenchman Jerome Binda, a former graphic designer and antiquer, who found his second home in Tinos. From 2.500 bottles production in 2015 to 8.500 in 2017, Jerome contributes at large to the exploding Natural Wines scene in Greece. His idiosyncratic wines are based on local varieties of the island such as Aspro Potamissi, Mavro Potamissi, Koumariano and Rozaki. The wines are extremely scarce, bottled without the addition of sulphites, and farming is organic since 2013.
The wine: Fascinating blend of Aspro Potamissi 80% and Rozaki 20%, hand-harvested grapes from centenary and old traditional "crawling" vines, altitude 300 to 350m, facing North, East and South-East, feet-trod, indigenous yeasts, fermented separately, lees, no filtering, no fining. No added sulphites (total SO2 4.5MG/LT). Delightful, textural wine with fine aromatic expression and purity of fruit. Mainly citrus fruit with red fruit notes. Store it in a cool room until consumption.
