Foivos Papastratis F Santorini ONE OFF 2020

ONE OFF is the new project by Foivos Papastratis, with limited vinifications, each time in another wine production area in wineries of good friends, with different varieties, different techniques for a unique time. For the 2020 harvest, his journey starts from Santorini where, in collaboration with the Anhydrous winery, he creates F Santorini 2020. The winemaking took place in stainless steel tanks with wild yeasts and remained with the lees for 6 months.

A wine with white-yellow color, with some golden highlights to make their appearance. On the nose, the minerality of Assyrtiko coexists exceptionally with aromas of citrus, pear, peach, apricot, with botanical elements such as chamomile to follow and hints of white flowers to complement its character. On the palate the harmony is excellent, with the sharp acidity balancing with the full body and leading us to a long aftertaste.
