The art of creation is endless for Apostolos Thymiopoulos and he is proving it once again with the Blanc de Rose label. In 2009 he vinified a quantity of Xinomavro which he intended for rosé wine. Fermentation started spontaneously with native yeasts, but due to the sudden drop in temperature, fermentation stopped. The semi-fermented wine remained in stainless steel tanks with the fine lees for a full 6 years. In 2015 he decided to end this fermentation. He removed 1.5 tons of semi-fermented wine and divided it into 3 barrels of 500 liters each. In the vacuum created in the tank, he added whole Malagouzia grapes which helped restart the fermentation at a very slow rate. The second fermentation lasted a total of 5 years until all the sugars of both Xinomavros and Malagouzia were finally fermented. The wine was bottled in 2020 and remained in the winery's cellar until September 2024 where it was released.


In the glass we find an amber color. On the nose the complexity is tantalizing as floating aromas of citrus jam, dried white flowers, honeycomb, almond, with notes of sage, spices to follow and some earthy hints to express its character. In the mouth, the body is full, with refreshing acidity, a pleasant feeling of tannins and an aftertaste that lasts for a while.
