Domaine de Kalathas Pappou! 2022

The Estate: Domaine de Kalathas (DDK) is the child of the Frenchman Jerome Binda, a former graphic designer and antique dealer, who found Tinos his second home to make it his first. Jerome puts his little stone in the scene of Natural Wines in our country, based on the local varieties Aspro Potamisi, Black Potamisi, Koumariano and Rosaki. The wines are extremely hard to find, they are now bottled without adding sulphites, and the cultivation has been organic since 2013.

The wine: Pappou comes from old bush vines, it is a tribute to the wines made by the old farmers of Tinos. It is a blend of Rozaki, Aspro and Mavro Potamisi. The three varieties are harvested together, crushed by foot, slowly pressed and aged in tanks. A wine with aromatic and taste characteristics of full quince, wild flowers and spices, with a textured and very lively palate.
