Thalassinos Microwinery The Cultist Old Roots 2021
Thalassinos Microwinery is located in Finikia, Heraklion and was created by the spirit and vision of two young people, Isidoros and Virginia that united their common love for wine so as to continue their viticultural heritage. They aim at biodiversity and permacultura, with the majority of the work being done manually and with the lowest energy footprint (zero waste philosophy). As a result they create wines with native yeasts, low sulfites and minimal intervention so as to highlight the character of the varieties.
For the creation of The Cultist Old Roots a 100 day extraction and spontaneous fermentation in amphorae are followed. Then after 25 months it is bottled unfiltered and sulphite free.
On the glass we have a light amber colour. On the nose we find aromas of sweet cherry, dried plums and figs, cloves, followed by notes of black tea. In the mouth the body is medium, with lively acidity, well-integrated tannins and a lasting aftertaste.
