Jima Winery Dame Rouge II Day 7 2020
Jima winery is a family business founded by oenologist Panagiotis Jima and his wife Christy Karagiannidou. The agronomist Nikos Tzimas, brother of Panagiotis, has taken care of the vines. The winery was designed by the architect Athanasios Stergioulis and is located on the farm next to their family home, in the village of Kalomodia in Arta. The emblem of the winery is the stork, which faithfully visits them every spring, moving among the vines, looking for its food.
Dame Rouge II Day 7 is a wine created from late harvest grapes, some of which are subjected to the Appassimento method. Appassimento is found mainly in Amarone wines in Italy and refers to the process of drying & dehydrating the grapes for a few weeks to a few months, to dehydrate and concentrate the sugars and generally their taste characteristics.
In the glass we have a deep ruby color. On the nose we find strong aromas of plum, crème de cassis, dates, with cocoa and spices following and notes of leather and tobacco to complete its character. Rich on the palate, with intense but well-integrated tannins, pleasant acidity that balances with the alcohol and a lasting aftertaste.
